FIESTA OMELETTE 
3 eggs
3 tbsp. milk
Salt and pepper
Chopped green chilies
Salsa
Chopped ham
Grated Cheddar cheese
Grated Jack cheese
1 tbsp. butter
Tortilla chips

Beat eggs with milk, salt and pepper. Heat butter in skillet. Add eggs and cook slowly. Run spatula around edge, lifting to allow uncooked portion to flow underneath. When eggs are almost cooked but still shiny, add cheeses, chilies and ham, just off center. Roll and slip out on plate. Top with your favorite salsa and garnish with tortilla chips.
