JEAN'S APRICOT CHICKEN OR PORK 
1 pkg. dry onion soup mix
1 sm. bottle creamy Italian dressing or Ranch
1 sm. jar apricot preserves
3/4 c. of water
4 to 6 boneless chicken breasts, skin removed

Pork chops could be used instead, but trim off fat. Mix onion soup mix and 3/4 cup of water. Bring to boil, then turn off heat and let sit a few minutes. Mix in dressing and preserves. Pour into casserole dish. Put in chicken and turn pieces to coat with mixture. Cover and bake at 325 degrees for 1/2 hour. Uncover and bake for 1 hour more.
