JOHNNY CAKES 
4 c. cornmeal
3 c. boiling water
1/4 c. firmly packed brown sugar
2 tbsp. butter, softened
1 tsp. salt
2 eggs, lightly beaten
Butter & maple syrup or molasses to serve

Preheat oven to 400 degrees. In a medium mixing bowl, combine cornmeal and water, stirring well by hand (mixture will be very thick). Stir in remaining ingredients. Using about 1/2 cup mixture for each cake, spread mixture into circles about 4 inches in diameter on greased baking sheets. Bake 20-25 minutes or until centers are set. Serve warm with butter and maple syrup or molasses. Yield 10-12 Johnnycakes.
