SCONES 
2 c. sifted flour
3 tsp. baking powder
2 tbsp. sugar
1/2 tsp. baking soda
1/2 c. shortening
1 c. buttermilk (or milk soured with lemon juice)
1/4 c. raisins
1 beaten egg white

Sift together flour, baking powder, sugar and soda. Cut in shortening. Add soured milk and raisins. Divide dough into 3 parts. Roll out (on floured surface) into a circle, 1/3 inch thick. Cut into wedges and brush tops with egg white. Bake at 425 degrees for 12 minutes on ungreased baking sheet. Serve with butter and jam.
