CHILE RELLENOS | |
1 can Ortega whole chilies (4 to 6) 4 to 6 strips of Monterey Jack or yellow cheese 1 x 4 inch size 4 to 6 eggs (1 egg per chile) Wrap cheese with chilies. Separate eggs and beat whites stiff. Fold in beaten yolks. Dip chilies and cheese in egg mixture using all of it and place in greased baking dish. Bake at 325 degrees for 20 minutes or until golden brown. Instead of baking you can deep fry in oil at moderate heat. Turn only once. For best results the eggs should be very cold before separating. If necessary place them in the freezer for 10 minutes. |
