QUICHE LORRAINE 
1 (9 inch) unbaked pie shell, well chilled
1 tbsp. soft butter
12 bacon slices, cooked
4 eggs
2 c. heavy cream
3/4 tsp. salt
Pinch of nutmeg
Pinch of sugar
Pinch of cayenne pepper
1/8 tsp. pepper
1/4 lb. natural Swiss cheese, grated

Preheat oven to 425 degrees. Rub butter over surface of unbaked pie shell. Combine eggs, cream, salt, nutmeg, sugar, and cayenne pepper. Beat just long enough to mix thoroughly. Sprinkle pie shell with crumbled bacon and cheese. Pour in cream mixture.

For Spinach Quiche: Break up 1 package spinach and sprinkle on pie shell with bacon and cheese. Bake at 425 degrees for 15 minutes. Reduce oven to 300 degrees. Bake 40 minutes. Serve at once.
