GRANDMA GILLIAM'S LEMON PIE 
3 uncooked 6" pastry shells, rolled thin
6 eggs
3 c. sugar
3 lemons
1 stick butter

Let butter soften at room temperature. Grate the rind of 3 lemons. Cut lemons in half and squeeze juice over grated rind. Add sugar slowly to soft butter. Beat 6 eggs light. Add to creamed butter and sugar. Beat light. Add lemon and pour into pie shells. Bake in 375 degree oven for 30 minutes (approximately).
