SAUSAGE RICE STUFFING 
3/4 c. rice
1 1/2 c. water
1/2 lb. Italian sausage, casings removed
1 onion, chopped
1/8 tsp. pepper

1. Prepare rice. Boil water, add rice, stir, bring to a boil, stir, lower heat, cover and simmer 15 to 20 minutes or until all water has been absorbed.

2. Cook sausage until browned, breaking apart with a fork. Drain on paper towels.

3. Toss sausage, onion and pepper with rice. Place in casserole bowl. Bake 20 minutes at 350 degrees or use as stuffing for chicken or turkey.
