MINCEMEAT FILLED COOKIES 
2 1/4 c. flour
1/4 tsp. salt
2 tsp. baking powder
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1/2 tsp. vanilla
1 tbsp. milk

Sift together flour, salt, and baking powder; cream together shortening and sugar; add eggs and vanilla. Add sifted ingredients. Add milk. Roll out dough and cut rounds with small juice glass. Place 1 teaspoon mincemeat on half of the rounds. Top with another round with small hole cut out of center. Bake at 350 degrees for 12 minutes on greased cookie sheet. Makes a 27 ounces jar of mincemeat. Makes 2 batches.
