MINCEMEAT COOKIES 
1 c. shortening
3 eggs
1 tsp. baking soda
1 1/2 c. mince meat
1 1/2 c. white sugar
3 c. flour
1/2 tsp. salt

Preheat oven to 375°F. In large mixer bowl, cream together shortening and sugar. Add eggs, beating until smooth. Combine dry ingredients; gradually add to creamed mixture. Mix well. Stir in mince meat. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.

Bake 8 to 10 minutes or until lightly browned.

Makes about 6 1/2 dozen cookies.
