EGGPLANT PARMIGIANA 
2 med. eggplants
8 oz. Mozzarella cheese
1 c. Romano cheese
6 eggs
1 tsp. parsley
1 dash pepper
1 dash salt
3 c. oil
2 c. spaghetti sauce

Take 2 medium eggplants, peel and slice them round.

Mix 6 eggs, Romano cheese, 1 teaspoon parsley, dash pepper, 1 dash salt. Meanwhile warm up oil, make sure it is hot.

Dip eggplant in oil and fry. Place in baking pan. Top it with Mozzarella and sauce. Bake 20 minutes at 350 degrees. Serve.
