TAPIOCA PUDDING (Microwave) | |
2 c. milk 1/4 c. sugar 2 1/2 tbsp. quick cooking tapioca 1/4 tsp. salt 1 tsp. vanilla 2 eggs, separated 2 tbsp. sugar Combine milk, 1/4 cup sugar, tapioca, salt, vanilla and egg yolk in 4 cup glass bowl; beat with rotary beater. Microwave for 8 minutes on simmer. Beat well and continue cooking 6-7 minutes on simmer or until mixture boils. Beat egg whites in small mixing bowl until frothy. Gradually add 2 tablespoons sugar, beating until mixture forms soft peaks. Fold egg whites into pudding. Serve warm or cold. |
