TAPIOCA PUDDING (Microwave) 
2 c. milk
1/4 c. sugar
2 1/2 tbsp. quick cooking tapioca
1/4 tsp. salt
1 tsp. vanilla
2 eggs, separated
2 tbsp. sugar

Combine milk, 1/4 cup sugar, tapioca, salt, vanilla and egg yolk in 4 cup glass bowl; beat with rotary beater. Microwave for 8 minutes on simmer. Beat well and continue cooking 6-7 minutes on simmer or until mixture boils.

Beat egg whites in small mixing bowl until frothy. Gradually add 2 tablespoons sugar, beating until mixture forms soft peaks. Fold egg whites into pudding. Serve warm or cold.

Since microwave ovens vary in power, you may need to adjust your cooking time.
