SALMON & VEGETABLE FRITTATA 
1 c. favorite frozen vegetables
1/4 c. chopped onion
1 1/2 tbsp. vegetable oil
2 eggs, beaten
Salt & pepper to taste
1 (7 1/2 oz.) can salmon, drained, flaked
1/4 c. grated cheddar cheese (opt.)

Use ovenproof skillet. Saute vegetables and onion in the oil about 5 minutes or until vegetables are crisp-tender and onion is soft.

Combine eggs, salt and pepper and pour over vegetables. Place salmon on top and press into egg mixture. Cover loosely with foil and bake in 350 degree preheated oven for 15 to 20 minutes, until eggs are set. Sprinkle on cheese and return to oven until cheese melts. Cut into 2 to 3 wedges. Can be topped with prepared salsa.
