TENDERLOIN PARMIGINA 
1 egg
1/2 tsp. seasoned salt
1/8 tsp. pepper
1/2 c. bread crumbs
2 tbsp. oil
2 (7 oz.) pork tenderloins
1 (15 1/2 oz.) jar spaghetti sauce
1/4 c. Parmesan cheese
2 slices Mozzarella cheese

Beat egg; add salt and pepper. Dip tenderloins in egg mixture, then crumbs. Brown on both sides in oil. Place in shallow pan. Pour spaghetti sauce over meat and sprinkle with Parmesan cheese.

Bake covered in 350 degree oven 30 minutes. Remove cover and top with Mozzarella cheese. Cook 10 minutes or until cheese melts and meat reaches 170 degrees internal temperature. Serves 4-6.

Very good recipe. It is not clear in the recipe if you leave the pork tenderloin whole or slice into medallions. I made 3/4-inch medallions and they were very good.
