RICE AND GREEN CHILI CASSEROLE 
4 c. cooked Minute Rice
1 carton (16 oz.) sour cream
2 tsp. salt
4 tbsp. butter
1 (6 oz.) can chopped green chillies
1 lg. onion, chopped
3 (12 oz.) pkgs. grated Monterey Jack cheese

Combine cooked rice, butter, green chillies, sour cream and 2 packages of cheese and pour into large greased casserole. Top with remaining cheese. Bake at 350 degrees for 30 minutes.
