CAPT'N NED'S CRANBERRY MUFFINS | |
3/4 c. cranberry halves 1/2 c. powdered sugar 2 c. flour 3 tsp. baking powder 4 tbsp. shortening, melted 1/2 tsp. salt 4 tbsp. sugar 1 egg, well beaten 1 c. milk Mix cranberry halves with powdered sugar and let stand while preparing muffin mixture. Sift dry ingredients, add eggs, milk and shortening; then add the sugared cranberries. Mix but do not beat. Bake in a moderate oven (350 degrees) for 20 minutes. Makes 12 muffins. Cranberry jelly - strained or whole may be used. |
