CHEESY LIMA CASSEROLE | |
8 oz. dried lima beans 2 1/2 c. water 1/2 c. onions, chopped 1/2 c. shredded processed American cheese 1/2 tsp. salt 1/4 tsp. rubbed sage 3 slices crisp cooked bacon, drained and crumbled Rinse beans; place in large saucepan. Add water; soak overnight or bring to boil. Cover and simmer 2 minutes. Let stand 1 hour. DO NOT DRAIN. Simmer, covered, 1 hour. Add onions, cheese, salt, sage, and a dash of pepper; mix well. Turn into 1 1/2-quart casserole. Bake at 350 degrees for approximately 35 minutes. Sprinkle with bacon. |
