PETITE CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
12 vanilla wafers
1 can pie filing (cherry, blueberry, etc.)
1 tsp. vanilla

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin pan with paper baking cups and place a vanilla wafer on the bottom of each. Fill cups 2/3 full with cream cheese mixture.

Bake at 375 degrees for approximately 15 minutes or until set. Cool and then peel papers. Top each with 1 or 2 tablespoons of pie filling.
