HARVARD BEETS 
2 tbsp. butter
2 tbsp. flour
1/4 c. boiling water
1/4 c. sugar
1/4 c. vinegar
1 can cubed beets or 12 sm. beets, cooked

Melt butter; add flour. Blend well and add boiling water. Cook until thickened, stirring constantly. Add sugar, vinegar, salt, pepper and beets. Simmer until smoking hot and thick.
