CARROT CAKE WITH PINEAPPLE 
1 1/2 c. Wesson oil
3 eggs
1 c. crushed pineapple, drained
1 c. chopped nuts
1 tsp. cinnamon
1 tsp. vanilla
2 c. sugar
2 c. grated carrot
2 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

Cream oil, sugar and eggs well. Add pineapple, grated carrots, mix well. Sift flour, soda, salt, cinnamon together. Add to creamed mixture. Add vanilla, beat well. Bake 45 minutes at 350 degrees.

CREAM CHEESE FROSTING:

1 box XXX sugar
3 oz. Philadelphia cream cheese
1 stick butter
1 tsp. vanilla

Mix well.
