PAPA'S CATFISH STEW 
8 lb. catfish
8 lb. potatoes, shredded or diced
6 lb. onions
1 bottle Texas Pete hot sauce
1 (14 oz.) bottle ketchup
1 1/4 lb. fatback, fried, retain grease
1 lb. butter
2 cans Hunt's Special sauce
1 can tomato sauce

Boil catsup in a small amount of salted water until tender. Boil onions and potatoes in salted water until tender. Debone catfish and add to potato-onion mixture. Add remaining ingredients. Add salt and pepper to taste. Makes about 3 gallons.
