SWEET POTATO BISCUITS 
1 1/2 c. sifted flour
2 tbsp. baking powder
3/4 tsp. salt
1/2 c. cold shortening
1 c. milk
1 1/2 c. mashed potatoes

Sift flour, baking powder, and salt together. Cut in shortening. Combine milk and sweet potatoes. Add to first mixture and stir quickly. Knead lightly, using as little flour as possible on board. Roll out to 1/2 inch thickness, cut with floured cutter. Place on greased baking sheet and bake in a hot oven (425 degrees) 12 to 15 minutes.

Makes 25 biscuits.
