FRUIT FINLANDIA (FRUIT SOUP) 
1 c. dried apricots
2 c. water
1/3 c. quick tapioca
1/8 tsp. salt
4 c. orange juice
1 can mandarin oranges
12 cooked prunes
1/2 c. white raisins
1 banana, sliced
3 tsp. sugar (optional)

1. Combine apricots and 1 cup water in small saucepan. Heat to boiling. Remove from heat. Cover. Let stand 1 hour.

2. Stir tapioca and salt into 1 cup of remaining water and 1 cup orange juice in small saucepan.

3. Heat, stirring constantly to full rolling boil. Pour this into large bowl. Let stand 15 minutes.

4. Stir in 3 cups orange juice, apricots with their liquid, mandarin orange with their liquid, cooked prunes, raisins and banana. Add sugar, if desired.

5. Cover and chill. Thickens as it chills.
