SUPER CARROTS SCALLOPED 
4 c. sliced carrots
1/2 c. water
2 tbsp. flour
1 c. grated cheddar cheese
1 can French fried onion rings
1/2 tsp. salt
2 tbsp. butter
1 c. milk

Cook carrots in salted water and drain. Melt butter, stir in flour, stirring constantly until thickened, add cheese. Stir until melted. Place 1/3 of carrots in 1 1/2 quart casserole, cover with 1/3 of onion rings. Repeat layers reserving 1/3 of onion rings for top. Pour sauce over carrot mixture. Bake for 15 minutes at 350 degrees. Sprinkle with reserved onions, bake 5 minutes longer. Serves 4 with no leftovers!!!!!
