POTATO SOUP 
1 large yellow onion
butter (to cover bottom of pot)
1 tbsp. bacon bits
1 tsp. celery powder or celery leaves
10 to 12 red potatoes, peeled and cut into small squares
salt to taste
2 tbsp. parsley

You will need a 5-quart pot.

Brown onion slightly in pot with butter. Add bacon bits and brown a little. Add water to cover half of pot. Add celery powder, potatoes, salt and parsley. Add more water if potatoes are not covered. Simmer, with tilted lid, until potatoes are done. Mash some potatoes on side of pot to thicken. Let sit for 1 hour with fire off for flavor to get through.
