GOURMET POTATOES 
6 lg. potatoes, cooked with skin
2 c. shredded sharp cheese
1/2 c. butter
1 1/2 c. sour cream
1/3 c. chopped onion
1 tsp. salt
1/2 tsp. pepper

Cool potatoes, peel and cube. Combine cheese, butter and melt. Add sour cream, onions, salt and pepper. Pour over potatoes. Put in greased 2 quart casserole. Bake 45 minutes at 350 degrees. Great to make ahead and freeze. Double for 9"x13" pan. Freeze, don't bake until ready to use.
