MANICOTTI 
1 c. flour
1 c. water
3 eggs
1/4 tsp. salt

FILLING:

3 lb. skim milk (ricotta)
3 eggs
:
Oil to fry
3 tbsp. parsley
Salt
Pepper

To make shells mix all ingredients. Use 6 inch skillet. Make crepes as thin as possible. Let cool between toweling.

Mix all filling ingredients and place a dollop in middle and fold sides over. Cover with Italian sauce. Makes 18 shells.
