FRESH FISH MEXICAN STYLE 
Fresh fish fillet (orange roughy, or halibut, or white fish, or tubot, etc.)
Fresh salsa (refrigerator section of market)

Place 1 fillet of fish on an 11 x 14 inch piece of aluminum foil. Spoon salsa over top. Make pouch by folding three sides over (crimp sides and top). Place in covered electric BBQ - 10 minutes (do not overcook). Thicker fish may take longer.

OR USE HOMEMADE SALSA
3 tomatoes, chopped
1/2 c. red onion, chopped
1/4 c. cilantro
1/4 c. radish (red)
1 yellow pepper
1 sm. jalapeno

Chop and stir together. Add 7-Up. Delicious.
