SEAFOOD-STUFFED BRIE 
1 (8 oz.) pkg. brie cheese, chilled
2 tbsp. pecans, finely chopped
1 tbsp. butter
1 c. seafood salad, thawed
1/2 c. colby cheese, finely shredded

Cut the Brie in half crosswise. Place the bottom half, cut side up on a serving plate. Trim crust from the top of remaining half. Discard crust, set cheese aside. Combine the pecans and butter in a small bowl. Microwave at high for 2 1/2 to 3 minutes or until the pecans are toasted, stirring after every minute of cooking time. Place seafood salad in bowl. Stir in the pecans and the colby cheese. Press half of the seafood mixture onto the bottom half of the brie.

Cover with the top half. Then press the remaining seafood mixture onto the brie. Microwave at 50% for 1 1/2 to 2 minutes, or until the brie is warm and softened, rotating tray after every minute of cooking time. Serve with assorted crackers.

Since microwave ovens vary in power, you may need to adjust your cooking time.
