HAM AND RED EYE GRAVY 
2 center cut ham slices (with fat)
1 1/2 c. water
1/8 tsp. white pepper

Trim a small amount of fat from ham. Place fat in iron skillet and cook over medium heat to obtain about a tablespoon of ham grease. Stir the grease around to coat the skillet.

Score edges of ham to prevent curling. Cut slices in halves or quarters and fry slowly, turning occasionally until meat is lightly browned, don't over cook. Remove ham slices to serving dish.

Turn heat to medium high until skillet starts to smoke. Slowly add water, stirring constantly. Add pepper and cook, stirring occasionally, until water is reduced by about 1/3.

It would be fine if coffee is used instead of water. When the coffee separates from the grease the red eye forms. That is what is dipped out and eaten. I don't pour grease over my biscuits.
