CHEESE BLINTZES 
3/4 loaf white sandwich bread
1 (8 oz.) pkg. cream cheese
1 drop lemon extract
1 egg yolk
1 tsp. vanilla
2 sticks butter
cinnamon-sugar

Remove crust from bread and flatten each slice with a rolling pin. Mix together cream cheese, flavorings and egg yolk. Spread approximately 1 heaping teaspoon of the mixture per slice of bread. Roll the bread up as a jelly roll and cut into three pieces.

Melt butter and dip each piece in briefly. Roll in cinnamon-sugar and place on a cookie sheet.

Bake at 350°F until brown, approximately 20 minutes. Place in freezer about 10 minutes until they harden. Then place in a large freezer bag and keep frozen until they are ready to eat.
