STRAWBERRY RHUBARB CAKE | |
1 c. flour 2 tbsp. shortening 1 tsp. baking powder 1 egg 1/4 tsp. salt 1 tbsp. milk 2-3 c. diced rhubarb 1 (3 oz.) pkg. strawberry Jello (dry) 3/4 to 1 c. sugar 1/2 c. flour 1/4 c. melted butter Blend flour, shortening, and baking powder together as for pie crust. Then add egg, salt, and milk. Work into 9 inch square cake pan with fingers. Sprinkle on rhubarb and Jello. Mix together sugar, flour, and butter for streusel. Bake at 350 degrees for 30-45 minutes. Double recipe for 9 x 14 pan. |
