ZUCCHINI RELISH 
10 c. zucchini, peeled and chopped
4 lg. onions
6 peppers
4 tbsp. salt
5 c. sugar
2 1/2 c. vinegar
1 tbsp. celery seed
2 tbsp. cornstarch
1 tbsp. alum
1 tbsp. turmeric

Mix first 4 ingredients. Let stand overnight. (I use a food processor on these to chop fine.) After soaking, drain, let stand 1 hour.

In a saucepan mix the rest of ingredients. Simmer for 1/2 hour. Mix all together and fill jars. Boil jar lids and seal.
