BLACK RICE PUDDING 
2 c. black glutinous rice
3 qt. water
1 1/2 c. sugar
1/2 tsp. salt
1 cinnamon stick
1 tbsp. vanilla extract
1 can coconut milk

Bring rice and water to a boil. Reduce to medium, stirring occasionally so that it doesn't stick at the bottom of the pot. Add sugar, salt, vanilla extract, and cinnamon stick. Turn down heat to simmer. It is done when the rice grains are swollen and liquid is thick. If not, you can add 2 cups of water and continue to simmer. Serve warm in individual bowls with 1 1/2 tablespoons coconut milk swirled on top.
