MERRY CHRISTMAS COOKIES 
1/3 c. shortening
1/3 c. sugar
1 egg
2/3 c. honey
1 tsp. lemon flavoring
2 3/4 c. flour
1 tsp. baking soda
1 tsp. salt

Mix shortening, sugar, egg, honey and flavoring thoroughly. Measure flour by sifting. Blend flour, soda and salt; stir in. Chill dough. Heat oven to 375 degrees. Roll dough 1/4 inch thick. Cut into desired shapes. Place 1 inch apart on lightly greased baking sheet. Bake 8-10 minutes. When cool, ice and decorate as desired. Makes approximately 5 dozen.

My family also called these "Merry Christmas Cookies" and were what we thought of when thinking Christmas cookies. They have a much more pleasant taste than sugar cookies or shortbread. Excellent when eaten with tea. We decorated them with flavored, powdered sugar icings. I and my siblings have loved and cooked and decorated them for over 50 years. None of the in-laws like them.
