ORANGE RUFFIE 
1 1/2 lb. orange ruffie fillets
1/2 c. slivered almonds
1/4 c. minced parsley
1/4 c. butter, melted
2 tsp. lemon
1 tsp. salt
1/4 tsp. pepper
Lemon wedges

Rinse fillets, pat dry with paper. Arrange single layer of fillets in shallow baking dish. Sprinkle with almonds and parsley. Combine melted butter and lemon juice; pour over fish. Salt and pepper to taste.

Bake covered at 350 degrees for 10 minutes in oven. Bake another 6-10 minutes uncovered until fish flakes. Serve with lemon wedges.
