FRUIT SOUP 
1/2 c. pearl tapioca
6 c. water
2 c. apple juice
3/4 c. sugar
1 cinnamon stick
1 tbsp. orange rind, grated
2 tsp. lemon rind, grated
1/4 c. orange juice
2 tbsp. lemon juice
1 (12 oz.) pkg. mixed dried fruit, cut in sm. pieces
1 c. raisins

Soak tapioca in water to cover 2-3 hours. Drain. Combine in large saucepan water, apple juice, sugar, tapioca, raisins, dried fruits, and cinnamon stick. Simmer until tapioca is clear, the fruit tender, and mixture thickened, 2-3 hours. Stir occasionally to prevent sticking. Stir in orange rind, lemon rind, orange juice, and lemon juice. Serve hot or cold.
