BAKED EGGPLANT SLICES 
1 c. mayonnaise
1/4 c. finely chopped scallions or onions.
12 unpeeled eggplant slices (1/2-inch thick)
20 Ritz crackers, crumbled
salt

Mix mayonnaise and scallions together. Spread on both sides of eggplant slices. Dip in crumbs. Place on cookie sheet.

Bake for 15 minutes in a 375°F oven. Turn over and bake for 15 minutes longer until tender. Sprinkle with salt.
