SPICY CATFISH AMANDINE 
1/4 c. butter, melted
3 tbsp. lemon juice
6 (6 oz.) catfish fillets
1 1/2 tsp. creole seasoning
1/2 c. sliced almonds

Combine butter and lemon juice; dip each fillet in butter mixture and arrange in a 13x9x2 inch baking dish. Sprinkle seasoning and almonds. Bake at 375 for 25- 30 minutes or until fish flakes easily when tested with a fork. Yield 6 servings.
