NEW ORLEANS CATFISH 
1/2 tsp. salt
2 c. cooked rice
1/2 tsp. curry powder
1/4 c. butter
1 dash black pepper
2 tbsp. grated onion
6 thin lemon slices
Chopped parsley

Mix salt, curry powder, black pepper, grated onions together. Brush fish with melted butter and roll in dry ingredients. Arrange fish over rice and bake at 350 degrees for 20 minutes. Take out; place lemon slices on each fish. Bake 15 minutes more and garnish with parsley.
