MICRO PICKLED BEETS | |
1 lb. can sliced beets 1/2 c. cider vinegar 1/2 c. water or beet juice 1/4 c. sugar 1/2 tsp. salt 1 bay leaf 2 whole cloves 1/2 tsp. dry mustard 1/4 to 1/2 tsp. celery seed Place drained beets in 2 pint jars or other suitable container. Mix other ingredients in 2 cup glass measure and microwave on high 2 minutes. Stir. Microwave 2 more minutes or until bubbly. WATCH! Remove from oven. Pour over beets. Refrigerate. (Hard boiled, peeled eggs may also be added.) Serves 8. |
