MICRO PICKLED BEETS 
1 lb. can sliced beets
1/2 c. cider vinegar
1/2 c. water or beet juice
1/4 c. sugar
1/2 tsp. salt
1 bay leaf
2 whole cloves
1/2 tsp. dry mustard
1/4 to 1/2 tsp. celery seed

Place drained beets in 2 pint jars or other suitable container. Mix other ingredients in 2 cup glass measure and microwave on high 2 minutes. Stir. Microwave 2 more minutes or until bubbly. WATCH! Remove from oven. Pour over beets. Refrigerate. (Hard boiled, peeled eggs may also be added.) Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
