ZUCCHINI BREAD 
3 eggs
3 c. sugar
3 c. flour
3 c. chopped zucchini (chopped raw)
1 c. salad oil
1 tsp. baking powder
2 tsp. vanilla
1 1/2 c. nuts and/or coconut combination
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Beat eggs, salad oil, sugar and vanilla. Sift flour, salt, soda, cinnamon and baking powder. Add to above. Fold in coconut, nuts and zucchini. Bake at 350 degrees until done. (Mine took a little over an hour).
