CRANAPPLE WALNUT CAKE | |
1 c. honey 2 tbsp. frozen orange juice concentrate 1/2 c. Canola oil 2 c. unbleached flour (you can use 1/2 whole wheat flour) 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 2 eggs 1 tsp. vanilla 2 c. chopped cooking apples 1/2 c. chopped walnuts 1/2 lb. fresh, whole, raw cranberries Whip honey for about 10 minutes on high speed. Add orange juice concentrate. Cream together with oil. Add eggs and vanilla, and beat well. Sift together the flour and dry ingredients. Add to the first mixture and stir in apples, cranberries and nuts. Bake in a well greased 9 x 13 inch pan for 45 to 50 minutes at 350 degrees. |
