CRAWFISH DELIGHT 
1 lb. crawfish tails
2 c. raw rice
2 sticks butter
2 bell pepper
3 med. onions
4 stalks celery
1 can Rotel tomatoes
1 can cream of mushroom soup
1 can cream of onion soup

Finely chop seasoning and saute in butter. In a large dish combine rice, Rotel, soups and mushrooms. Add seasoning. Mix well. Add crawfish. Cover with aluminum foil and bake for 1 hour and 15 minutes at 350 degrees. Uncover and cook for about 10 minutes more.
