PINEAPPLE SQUARES 
Graham crackers or vanilla wafers
1 c. butter
2 c. confectioners sugar
2 eggs
1/2 pt. whipping cream
1 can crushed pineapple

Crush graham crackers or vanilla wafers for two cups of crumbs. Mix with 1/2 cup of melted butter. Put all but 2 tablespoons in a square glass pan or glass pie plate. Bake 10 minutes at 350 degrees and cool. Soften 1/2 cup butter and cream in 2 cups of confectioners sugar. Add 2 eggs, one at a time; beat well and pour over cracker mixture. Whip 1/2 pint whipping cream stiff. Add 1 can of well drained crushed pineapple. Put on top of the mixture in pan and sprinkle with the leftover 2 tablespoons of crumb mixture. Cover with Saran Wrap and chill 5 hours or overnight.
