GREEN BEAN SOUP 
1/4 lb. bacon or Fakin Bacon, minced
2 med. onions, chopped
3 med. potatoes, diced (peeled or unpeeled)
1 lb. green beans, cut in 1 inch lengths
1/2 tsp. salt
1 tsp. pepper
1/2 tsp. thyme
1/2 tsp. Spike Seasoning
3 c. milk or soy milk

DUMPLINGS:

1 1/4 c. flour (more if needed)
2 eggs
2 tsp. canola oil
1/2 tsp. salt

1. Boil potatoes and green beans separately. Drain and discard liquid from potatoes.

2. In large saucepan, fry bacon or Fakin Bacon. Saute onions in the drippings (add oil if necessary to Fakin Bacon drippings). Drain excess fat, add beans, including liquid. Add potatoes.

3. To make dumplings: Heat water to simmering. Combine flour, eggs, oil and salt with a fork to make a soft dough. To cook, dip teaspoon in simmering water, spoon about 1/2 teaspoon dough at a time; lower spoon in water to release dough. Cook dumplings about 2 minutes - transfer to soup pan with slotted spoon. Add milk to soup. Season to taste with salt, pepper, thyme and Spike. Serves 4-6.
