FRUITY ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. salad oil
2 tsp. vanilla
2 c. shredded zucchini, salt a little and squeeze out water
1 (8 1/2 oz.) can crushed pineapple, drain
3 c. flour, sifted
1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
2 tsp. baking soda
1 1/2 tsp. baking powder
1 c. raisins
1 c. nuts, chopped

Beat together eggs, sugar, oil, sugar, and vanilla. Add zucchini and pineapple and mix well. Sift dry ingredients and add to other mixture. Add raisins and nuts last. Pour into greased and floured loaf pans (2). Bake at 350 degrees for one hour.
