DATE COCONUT BALL 
1/3 c. butter
4 tsp. liquid sweetener
1/2 lb. of chopped dates
1 egg, beaten
1 tbsp. milk
1/4 tsp. vanilla
1/4 tsp. salt
2 c. Rice Krispies
1 oz. unsweetened coconut

In large pot, bring butter, sweetener, dates to boil. In separate bowl mix egg, milk, vanilla and salt. Add to date mixture and boil for 2 minutes. Cool. Add Rice Krispies, shape into balls and roll in coconut. Makes 60 (1 inch) balls.

NOTE: This can be eaten by a diabetic. One ball equals 1/4 bread exchange.
