COCONUT PEANUT DATE PIE 
1 (9 inch) unbaked pie shell
3 eggs
3/4 c. brown sugar, packed
1/2 c. butter, melted
1 tsp. vanilla
1 c. chopped, salted roasted peanuts
1/2 c. each shredded coconut and chopped dates

Beat eggs, sugar, butter and vanilla together; stir in peanuts, coconut and dates. Pour into unbaked pie shell and bake at 350 degrees until top is browned, 35 to 40 minutes. Serve warm or cooled.
