DATE NUT CAKES 
1 lb. chopped dates
1 lb. chopped pecans
1 c. flour
1 c. sugar
2 sticks melted butter
4 eggs
1 tsp. baking powder
1 tsp. vanilla
Dash salt
1/2 lb. red cherries
1/2 lb. green cherries

Cut cherries in half, keep 1/2 each for decorating. Mix in rest. Chop nuts. Sift together flour, baking powder and salt. Add dates, nuts and cherries. Melt butter, let cool then pour over above mixture. Separate eggs. beat yolks, sugar, vanilla; then pour over above mixture. Beat egg whites and fold into cake mixture (medium stiff). Decorate. Bake in miniature muffin tins 20 minutes at 325 degrees (grease and flour). Fill 3/4 full. Makes 7 to 8 dozen.
